 Notice about Cooking Style

 People have different ideas about food preparation  –  for example, how long should fish or meat be

 cooked or marinated? To help those amongst our clientèle who are unfamiliar with our

style, a few words are shown here to describe just some of these things.

 Fish takes a very short time to prepare and, if over-cooked, loses much of its flavour and texture. Our fish

is, therefore, served slightly under-done or, if marinated, left for only a short time in the marinade. 

 Meat, when cooked according to request, is

Rare, meaning Raw in the Centre, Seared on the Outside;

Medium-Rare, meaning when the meat is Pink Throughout;

Medium, meaning when the meat is Fully-cooked with a Pink Centre;

Well-Done, meaning Fully-cooked throughout.

Very-Well-Done means cremated.

 Cooking times also vary because we ‘Slow cook’ many of our dishes to enhance the quality of the final result.

 If a Main Course is ordered without a Starter, the Main Course can appear to take a long time to come.

 Some risks are attached to eating and drinking which we do our best to minimise at

the Wig & Mitre and Caunton Beck but it is necessary to provide a warning about

soft and hard bones and “shot”, “pips”, stones, nuts and shellfish particles.

 Such bones, “shot”, “pips”, stones and shell may be present in all dishes, including pâtés and soups,

which are prepared with ingredients having been sourced from animals, poultry,

game, fish, fruit, confectionery, the countryside and farms worldwide.

 Please tell a member of staff when placing your order if you have a medical condition

which may affect your health adversely by consuming such ingredients. 

 To date, our letters to suppliers questioning the inclusion of genetically modified products

indicate that there are none supplied, but please ask us if you would like clarification.
